Cheshire and Watermelon Salad
This delicious recipe with watermelon is perfect for the summer months when watermelons are at their peak. Enjoy the light flavor of the watermelon and the sharpness of the Cheshire cheese in this wonderful salad.

- Variation: Make with Feta cheese.
Ingredients
- 1 1/2 kg watermelon, deseeded and cubed 2.5cm
- 175 grams Cheshire cheese, cubed, 1 cm
- 5 tablespoons flat leaf parsley, coarsely chopped
- 1 tablespoon olive oil
- 2 tablespoons wine vinegar
- 2 tablespoons orange juice
Instructions
- Carefully mix the watermelon, Cheshire cheese and parsley.
- Refrigerate for 20 minutes.
- Whisk the oil, vinegar and juice and pour over the salad.
- Serve or chill until ready to use.
