Ingredients

  • 2 large cucumbers
  • 1 medium onion, thinly sliced
  • 2 scallions, chopped
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon sugar
  • 3 tablespoons apple cider vinegar
  • 1/4 cup greek yogurt
  • 1 tablespoon chopped fresh dill
  • fresh dill fronds for garnish

Perfect Potluck Cucumber Salad Recipe

  1. Slice the cucumbers into 1/2 inch slices and place into a large bowl.

  2. Peel the onion, slice it in half lengthwise and then crosswise into thin half-moons. Place into the bowl with the cucumber.

  3. Add the scallions, salt, pepper, sugar, and stir.

  4. Combine apple cider vinegar, yogurt. Mix in the dill and cover.

  5. Chill for about 2 hours before serving to allow flavors to blend.

  6. Garnish with fresh dill fronds just before serving if desired.

This sounds absolutely fabulous! I'll be making this tomorrow morning for a barbecue potluck we will be attending at 200. The only thing I question in this recipe is slicing the cucumbers one half inch thick. I'm just thinking that is really too thick of slices.

My husband doesn't like yogurt. Is there something else that I can replace it with or just omit the yogurt? This salad sounds delicious.

I don't care for yogurt either so I am going to use sour cream instead.

I'm very late in commenting, but I just saw it! My grandma and her sisters made it all the time and they always used sour cream. I have continued making this family favorite and now even my husband will ask for it too. So delicious and refreshing. My sister-in-law will add tiny bits of diced jalapeno pepper but that is her addition and my brother loves it. They like heat but not my part of the family!

Now this is a dish I know I would LOVE. I love sweet pickled cucumbers.

Usually, for a normal family meal, I make one salad containing everything. Sometimes it's nice, though, to have separate salads and this one is delicious. The flavors combine beautifully to create a lovely cool salad that is fit for any occasion and would be a great accompaniment to many meals.

Cucumbers have to be one my favorite veggies to use in a salad and onion goes so well with it you really can't go wrong here. I love that Greek yogurt is being used instead of mayo or sour cream and personally, I think it just tastes better than the both of them. Maybe some red onions and cherry tomato halves would brighten this up a little and I'm sure the dill will compliment them both very nicely.

What a completely delicious salad for a hot summer day! I had to Google scallions (called spring onions here in South Africa) but everything else was super easy. Even though it is winter here in southern Africa it was a lovely accompaniment to the barbecue we had on a beautiful warm day over the weekend.

This looks great. I've always enjoyed cucumber and onion salads and I want to try this one out. I'll probably use red onions for this and I could see adding some cherry tomatoes or tomato wedges into the mix as well. This is a nice salad to have on a summer evening as part of a light meal.

I've been making a similar cucumber salad recipe for years that contains sour cream and cider vinegar. It is wonderful. I'm hooked on Greek yogurt right now, so I'll pick some extra up this week to make this salad. We love cucumber salad with jambalaya and homemade bread!

Mmmmm this cucumber salad sounds absolutely delicious. I would love to try it. I like cucumber very much, especially with yogurt. I am not sure how it is going to taste with the apple cider vinegar but I will try it out. It is nice to see a light salad.
