Baked Potato Soup

Ingredients
- 2 large baking potatoes
- 3 tablespoons thinly sliced scallions
- 1/3 cup margarine or butter
- 1/3 cup flour
- 2 teaspoons snipped fresh dill or 1/4 teaspoon dried dill
- 1/3 teaspoon salt
- 1/4 teaspoon pepper
- 4 cups milk
- 3/4 cup shredded American or cheddar cheese
- 3 tablespoons chopped scallion for garnish
- 4 slices bacon, cooked crisp and crumbled
Instructions
- Preheat oven to 425°F.
- Wash potatoes and prick with a fork.
- Bake in oven at 425°F 40-60 minutes or microwave for about 7 minutes. Let cool.
- Cut potatoes in half, and scoop out potato. Discard skins.
- In a large saucepan cook scallions in butter until tender; stir in flour, dill, salt, and pepper. Add milk all at once. Cook and stir until thick and bubbly. Cook and stir for 1 minute more.
- Add potato pulp and 1/2 cup of cheese. Stir until melted.
- Garnish with remaining shredded cheese, scallion and bacon. You can also add couple tablespoons of chopped, canned or fresh tomato to the soup.

This is a great soup. I love potato soup and this version with cheese and bacon take it to another level. I like to add some sour cream to compliment the cheese. Maybe add just a little more bacon. But, it is still really good. If you like bacon, potatoes, and cheese, this soup is for you.

I have found the recipe you are looking for, beckyp........ Bennigan's Ultimate Baked Potato Soup This makes either 8 cup servings or 4 main dish servings. Ingredients: 3 lbs all-purpose potatoes, scrubbed and pierced in several places 1 Tbsp. stick butter or margarine 1 1/2 C. finely chopped onions 2 Tbsp. minced garlic 1 can (14 1/2 oz) chicken broth 3 C. milk 1 tsp. salt 1/4 tsp. Pepper TOPPINGS: shredded cheddar cheese, crumbled bacon & chopped scallions Preparation: 1. Heat oven to 400F . 2. Bake potatoes 1 hour or until tender when pierced. Peel when cool enough to handle. 3. Melt Butter in a 4 to 6 qt pot over medium low heat. Stir in onions and garlic, cover and cook 10 minutes until soft, but not brown. Add 2/3 of the potatoes and mash with a potato masher. Add broth, milk, salt and pepper. Bring to a simmer, stirring occasionally. 4. Cut remaining potatoes in small cubes. Add to soup and stir gently to reheat. Sprinkle each serving with toppings.

I need help. My Grandaughter is in Arizona. She says there are no Bennigans resturants near them. Her favorite soup is Bennigans Baked Potatoe soup. Do any of the recipies for this soup taste like the one Bennigans makes? She would be so thrilled. Thanks in advance. Becky
