Better Than Mom's Chicken Noodle Soup
This is one of the best chicken noodle recipes you will ever find. This is the one that you Mom and Grandmother made. It is perfect for when you are sick, it is perfect for a cold winter's day, or it is perfect for whenever you are in the mood for some chicken noodle soup. This will be your new go-to Chicken Noodle Soup recipe.
Ingredients
- (2-pound) chicken
- 3 sprigs fresh thyme
- 2 sprigs fresh parsley
- 2 bunches green onions
- 1 bay leaf
- 1 whole, medium carrot
- 1 rib celery
- 1 tablespoon salt
- 1 pinch black pepper
- 2 carrots, diced fine
- 2 ribs of celery, diced fine
- 1/2 package pasta of your choice, broken into 2 inch pieces
Instructions

Rinse chicken parts, put in large pot & cover with water.

Stir in salt & pepper then throw other ingredients on top.

Bring to boil over medium-high heat, cover & reduce heat.

Simmer about an hour or until chicken is done.

When done, strain through a colander reserving liquid. Return broth to the pot.

Let the chicken cool then pick meat off bones and add to broth.

Remove excess ingredients.

Add diced carrots, diced celery & broken pasta to broth, adding more water to cover if necessary.

Bring to boil over medium heat until pasta is done and carrots are tender.
- Add more salt & pepper to taste.
