Fantastic Fried Zucchini
Fantastic Fried Zucchini is an easy and delicious appetizer or snack. This fried zucchini recipe requires only a few basic ingredients, such as milk and flour plus a little salt and pepper. Then, simple as that, it is ready to serve!
Ingredients
- 1 egg, beaten
- 1/3 cup milk
- 1 cup flour
- salt, to taste
- pepper, to taste
- 6 zucchini, cut steak fries style
- splash of water
Instructions
- Put milk and flour into mixing bowl.
- Add the beaten egg and salt and pepper to the bowl.
- Mix batter in bowl until smooth.
- If batter is too thick add water.
- Dip zucchini slices into batter.
- Deep-fry zucchini in preheated oil until batter is crispy.

@Dolly: We posted your question on RecipeLion Facebook and got some suggestions from other readers: Lori Lackey Baker: were the slices completely dry?? i think they have to be dry before the batter will stick. Kim Landry: I would flour the zuccini before I put it into the batter it should help the batter to stick to it without a problem Lea Campbell: coat the veggie with corn starch or flour before dipping in the batter. I do it dry, wet, dry. makes for a better crunch Charlene Johnson Holland: I dip the slices in a beaten egg and then dip them in seasoned bread crumbs and fry them. I also do this with green tomatoes, yummy !!

I would try putting a dusting of flour onto it prior to dipping into batting.

I tried this recipe today. I used slices instead of steak fry cuts. The batter slid right off the zucchini so I had a big pool of batter in the pan and the zucchini came right up off the batter when I went to turn it. Any suggestions?

I love to do this to zucchini and also to eggplant, but I like to add some Italian bread crumbs to the mix to give is some crunch and a bit of extra flavor. I also make a casserole of the leftovers (if there are any) by pouring some red sauce (spaghetti sauce) over it sprinkle some Mozzarella over the top and bake it until the cheese is golden and bubbly.
