Fried Okra
Ingredients
- Small okra pods
- corn meal mix
- salt
- oil 1/2" to 1" deep in a pan
Instructions
Slice the okra into rounds about 1/4" wide, dredge in corn meal mix and fry. Salt it while it's in the pan. Drain and it should be crispy-crunchy. Note: Corn meal mixes are made by Martha White, White Lilly & Jim Dandy. There are probably others, but those are the ones I see in the grocery store often. Corn meal mix already has flour & baking powder added to it. If you were making cornbread, all you would have to add is an egg & milk.
