Tofu Sloppy Joes
This tofu joe recipe is a great vegetarian version of a childhood favorite. This is an excellent way to get the health benefits of tofu and still enjoy a delicious meal.

Ingredients
- 1 yellow onion, chopped
- 1 green pepper or celery stalk, chopped
- 1 pound tofu, frozen and thawed
- 1/2 cup ketchup
- 1 tablespoon prepared mustard
- 2 tablespoons cider vinegar
- 2 tablespoons soy sauce
- 2 tablespoons honey or maple syrup
- 1 teaspoon chili powder
- Whole wheat buns
Instructions
1. Squeeze the excess water from the thawed tofu and crumble.
2. Saute the onion and green pepper in a small amount of water until softened. Add the tofu and the remaining ingredients and mix well. Cook about 10 to 15 minutes, stirring occasionally.
3. Serve on whole wheat buns with your choice of garnishes.

Don't skip freezing the tofu part. It makes it more firm so it won't fall apart an get smushy.
