South African Yellow Rice

Ingredients

  • 1 cup/250 ml uncooked polished rice
  • 2 tsp/10 ml turmeric
  • 1 stick cinnamon
  • 1 tsp/5 ml salt
  • 2 Tbsp/25 ml yellow sugar
  • 1/2 cup/125 ml seedless raisins or sultanas
  • 2 tsp/10 ml butter

Instructions

Put rice, turmeric, cinnamon, salt and sugar in a saucepan. Cover with water and boil for 15 minutes, or until rice is tender and all moisture has been absorbed. Add raisins and steam in a colander over boiling water for 30 minutes. Remove cinnamon stick, fluff with butter and serve.
