Bruschetta

Ingredients

  • 2 medium 1/4" diced tomatoes
  • 2 tablespoon finely chopped fresh basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon crushed peppercorns

Instructions

Slice up 1 baguette (French stick), 1/2" thick slices. Toast 2" from broiler until golden brown, about 1 1/2 minutes. Next, rub peeled garlic cloves over each toast. Brush on extra virgin olive oil. Top with drained tomato mixture. Return to 350 degree oven for 5 minutes. Serve with pasta dishes; 2 per person.
