Ingredients
- 1 cup panko
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup flour
- 2 eggs, beaten
- 4 zucchini, cut into quarters lengthwise, then in half

- Lime Aioli Dipping Sauce
- 3/4 cup mayonnaise
- 2 tablespoon lime juice
- 1 teaspoon lime zest
- 1 garlic clove, finely minced

Heat oven to 425 degrees F. Line a large baking sheet with parchment paper.

In a large bowl combine the panko, Parmesan, Italian seasoning, garlic powder, salt and pepper.

Place the flour in a separate bowl and the eggs in another bowl.

Coat the zucchini in the flour, dip into the eggs then into the panko mixture pressing to coat.

Place the zucchini onto the baking sheet. Bake for 20-25 minutes until golden brown and crispy. Sprinkle with chopped parsley.

For the Lime Aioli sauce combine the mayonnaise, lime juice and zest and minced garlic in a small bowl and whisk until combined. Serve with the baked zucchini fries.
