Golden Cheese Puffs
Ingredients
- 1/2 cup flour
- 1 Tbsp butter
- 1 egg plus 1 egg yolk
- 1/2 cup finely grated tasty cheese
- 1 Tbsp grated Parmesan cheese
- 1/2 tsp dry mustard
- pinch cayenne
- oil, for deep frying
- salt and pepper to taste
Instructions
Sift the flour on to a square of greaseproof paper and set aside. Place butter and 2/3 cup water in a saucepan and heat gently until butter has melted. Bring the liquid to the boil and tip the flour all at once. Remove from the heat and stir well with a wooden spoon until the mixture leaves the sides of the pan and forms a ball. Allow to cool slightly. Beat the egg and egg yolk together in a bowl with a fork and then gradually add to the mixture in the pan, beating well after each addition. Stir the cheeses, mustard and cayenne into the mixture and season to taste with salt and pepper. Heat the oil in a pan to 190 C or until a cube of bread dropped into the pan browns in 30 seconds. Drop four spoonfuls of the cheese mixture into the oil at a time and deep-fry for 2 - 3 minutes until golden. Drain on kitchen paper and keep hot in the oven while cooking the remaining mixture. Serve with mango chutney and a green salad.
