"These Spanish Chickpea Croquettes, known as Croquetas de Garbanzos, are what simple and delicious comfort food is all about. We’re talking a ton of great flavors, basic pantry staples and all done in just 30 minutes. Serve them as a tapas appetizer next to some marinated olives and a couple ice-cold beers for the best moment of your day. To make this recipe, I used canned chickpeas, also known as garbanzo beans. You can also use dried chickpeas if you like. Just soak them overnight in plenty of water and then simmer them the following day for 1 to 2 hours or until tender."
