Louisiana French Fried Eggplant

When you live in Louisiana, you've tried frying just about everything. When potatoes won't do, consider trying our world famous louisiana french fried eggplant. It's a delicious way to enjoy vegetables and fried food at the same time!

Ingredients

  • 1 large long eggplant
  • 1 egg
  • 3/4 cup milk
  • Flour
  • Salt
  • White pepper
  • Powdered sugar

Instructions

  1. Peel eggplant and cut to size of large French fries.
     
  2. Soak 30 minutes in salted water. Rince and pat dry.
     
  3. Make a batter with egg and milk and season well with salt and pepper.
     
  4. Dip eggplant into batter, roll in flour and deep fry until golden.
     
  5. Sprinkle with additional salt and serve with powdered sugar.
     
  6. Serve as hors d'oeuvre with cocktails, or as vegetable with entree.
