Peppermint Cheesecake Brownie Bites

When you're hosting a party, you want to make sure your guests are satisfied with the snacks. In our experience, this means making a variety of sweet and savory treats. These brownie bites are an appetizer dessert recipe you just can't pass up adding to the menu! 

Our recipe calls for Andes chocolate mints, giving the brownies a nice minty flavor that pairs perfectly with chocolate, however, if you can leave them out if you want strictly cheesecake brownies. If you do choose to make the recipe as we did, these little bites are perfect for celebrating St. Patrick's Day, or for serving at Christmas time. 

As far as appetizer desserts go, brownie bites are always a hit.

Ingredients

  • 1/2 cup plus 2 tablespoons unsalted butter
  • 1 1/4 cup sugar
  • 3/4 cup plus 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon espresso powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon mint extract
  • 2 cold eggs
  • 1/2 flour
  • 3/4 cup Andes Crème De Menthe baking chips
  • 8 ounce cream cheese, room temp
  • 1/4 cup plus 2 tablespoons sugar
  • 1/4 teaspoon vanilla
  • 1 egg yolk

Directions

  1. Heat oven to 350. Lightly spray a mini muffin pan with cooking spray.

  2. Melt the butter in a small saucepan or the microwave.

  3. In a large mixing bowl whisk the sugar, cocoa powder, espresso powder and salt until combined.

  4. Add the melted butter and mint extract to the sugar mixture and mix well.

  5. Add the eggs one at a time and beat until the mixture is thick and shiny.

  6. Add the flour and mix until well combined. Fold in the mint baking chips.

  7. In a medium mixing bowl combine the cream cheese, sugar, vanilla and the egg yolk for the cheesecake swirl. Mix until well combined. 

  8. Spoon a tablespoon of the brownie batter into each muffin cup. Add about ½ tablespoon of the cheesecake swirl batter on top of the brownie batter.

  9. Using a knife swirl the cheesecake batter into the brownie batter.

  10. Bake for 15 minutes until set and when a wooden skewer or toothpick inserted in the middle of the brownie comes out clean.

  11. Let the brownie bites cool before removing them from the muffin pans.
