Tehina
"Tahini (also called Tehina) is a light and creamy sauce served by itself or as an additional ingredient in dishes such as halva, baba ghanoush, and hummus. Tahini is very popular in the Easten Mediterranean, Middle East, South Caucasus, and some parts of North Africa. Tahini goes well with falafel, vegetables, spread on toast, drizzled on meat, and used as a dressing. There are several simple ingredients to this dish and it takes less than 15 minutes!"

Mix tahini, garlic, water, pepper, salt and lemon juice until you get smooth paste. Add water if tehina is too thick. Serve as a thin layer on a small plate, with a drop or two of olive oil, garnish with pickles. Sprinkle with parsley or mix the parsley with the dip.
