Chicken Chow Mein
Ingredients
- 1 pound fresh or 9oz dried egg noodles
- 4-5 tablespoons seasoned stir-fry oil
- 8 ounce chicken breastmeat or pork fillet
- 4 ounce french beans
- 4 ounce fresh bean sprouts
- 1 teaspoon salt
- 1/2 teaspoon soft brown sugar
- 1 tablespoon chinese rice wine
- 2 tablespoon light soy sauce
- 2 spring onions (scallions), finely shredded
- a little stock, if necessary
- a few drops of sesame oil
Instructions
Cook noodles as per packet instructions in boiling salted water, drain, rinse under cold water and mix with a little sesame oil Thinly shred meat and top and tail beans. Heat about 2-3 tablespoons of oil in a wok until hot, stir-fry meat and vegetables for about 2 minutes, add the salt, sugar, wine, half the soy sauce, and about half the spring onions, blend well and add a little stock if necessary, remove and keep warm. Heat remaining oil and stir-fry the noodles for 2-3 minutes with the remaining soy sauce; Throw in the reserved meat and vegetable mix and stir to combine adding a few more drops of sesame oil if wished. Remove to a large serving dish garnished with the remaining spring onion.
