    Shrimp Toast

    For a quick and easy appetizer recipe that everyone will simply adore, make Shrimp Toast. With only 8 simple ingredients, this super easy recipe is an absolute breeze to make.

    Makes 48 pieces.

    Ingredients

    • 12 slices white bread
    • 1 pound shrimp, cooked
    • 1/2 cup whole water chestnuts
    • 1 tablespoon scallions, minced
    • 1 egg
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground white pepper
    • 1 1/2 teaspoon dry sherry

    Instructions

    1. Trim crusts from bread.
       
    2. Place shrimp, water chestnuts and scallions in food processor or blender. Chop until very fine.
       
    3. Beat egg and include in pureed mixture. Add salt, pepper and sherry to shrimp mixture. Mix well.
       
    4. Pour oil into deep fryer or skillet to depth of 2 inches. Heat until oil reaches 350 degrees F.
       
    5. Spread shrimp mixture over bread slices. Cut each slice into 4 pieces.
       
    6. Fry bread until golden brown, about five minutes. Drain and serve immediately.
