Thai Green Chilli (curry) Paste
Ingredients
- 4 Tbsp fresh green peppercorns
- 4 large chopped onions
- 8 finely chopped garlic cloves
- 1 tsp grated lime or lemon zest
- 3 tsp salt
- 2 tsp lemon grass powder
- 6 Tbsp finely chopped coriander
- 10 chopped green chillies
- 1/2 tsp ground turmeric
- 1 Tbsp ground cumin
- 1 Tbsp laos powder
- 1 Tbsp sesame oil
Instructions
Makes 1 small jar. Using a food processor puree all the ingredients until completely smooth. Put the paste into a clean jar. Seal tightly and store in the refrigerator for 4 days. When making your curry, always fry your amount of chilli paste first to release the spice flavours.
