Thai Green Chilli (curry) Paste

Ingredients

  • 4 Tbsp fresh green peppercorns
  • 4 large chopped onions
  • 8 finely chopped garlic cloves
  • 1 tsp grated lime or lemon zest
  • 3 tsp salt
  • 2 tsp lemon grass powder
  • 6 Tbsp finely chopped coriander
  • 10 chopped green chillies
  • 1/2 tsp ground turmeric
  • 1 Tbsp ground cumin
  • 1 Tbsp laos powder
  • 1 Tbsp sesame oil

Instructions

Makes 1 small jar. Using a food processor puree all the ingredients until completely smooth. Put the paste into a clean jar. Seal tightly and store in the refrigerator for 4 days. When making your curry, always fry your amount of chilli paste first to release the spice flavours.
