Anise Fig Biscotti
Ingredients
- 2 cups flour
- 1 tablespoon anise seed, crushed
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup sugar
- 1/4 teaspoon vanilla
- 2 tablespoons grated lemon rind
- 3/4 cup coarsely chopped dried figs
- 1 egg white, lightly beaten
Instructions
In a large mixing bowl, combine flour, anise, baking powder and salt. In a separate bowl, whisk together eggs, sugar, butter, vanilla and lemon rind. Stir in chopped figs. Add sugar-egg mixture to flour mixture until a soft sticky dough forms. Transfer dough to a lightly floured surface and knead into a smooth ball. Divide dough in half; roll each into a 12 inch long log. Place on ungreased baking sheet and brush tops with egg white. Bake in 350F degree oven for approx 20 minutes. Remove from oven and let cool on baking sheet on rack for 5 minutes. Transfer each log onto a cutting board. Using a sharp knife, and firm decisive strokes, cut diagonally into 3/4 inch thick slices. Stand cookies upright on baking sheet and bake for 20 to 25 minutes longer or until golden. Remove from oven and let cool on racks.
