Coffee Chocolate Chip Biscotti
Ingredients
- 1/3 c warm water
- 2 T instant coffee granules
- 2 large eggs
- 1 t vanilla
- 2 c flour
- 1 c sugar
- 2 t baking powder
- 1 t cinnamon
- 1/2 t salt
- 1/2 c mini semisweet chocolate chips
Instructions
Combine warm water and instant coffee in a 2 c measure, stirring until dissolved, cool. Whisk in eggs and vanilla. In large bowl combine dry ingredients. Add cooled coffee mixture and mix until dough forms. Stir in chocolate chips. Dough will be quite sticky. Cover and refrigerate several hours or overnight. Divide dough in half. On floured surface form each piece into 12" long by 2" wide logs. Place on parchment lined cookie sheet 3" apart. Bake and 350 F for 15 - 20 mins. until firm. Cool on rack. Cut logs diagonally into 1/2" thick pieces. Place cut side down on baking sheet and bake and 350 F for 6 mins. Turn over and bake another 6 mins until crispy. Cool cookies on rack. Makes 4 dozen.
