Homemade Lemon Squares
Ingredients
- 1 cup all purpose flour
- 1/2 cup butter at room temp.
- 1/4 cup sifted icing sugar
- 1 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 2 tbsp freshly squeezed lemon juice
- 1/4 cup shredded coconut, preferably unsweetened
- icing sugar
Instructions
Preheat oven to 350 F. Butter an 8-inch square baking pan. In a small bowl, stir flour with butter and icing sugar, using a spoon or a fork, press mixture into prepared baking pan building up 1/2 inch sides. Bake crust in centre of preheated oven until set and golden around edges, about 20 mins. Remove from oven and set aside. Leave oven at 350. In a small bowl, blend granulated sugar with baking powder and salt, using a fork. Beat in eggs, then add lemon juice. Beat vigorously with fork till fluffy, about 3 mins. Stir in cocnut. Pour over crust. Bake in centre of preheated oven until evenly browned and set about 20 to 25 mins. Cool in pan, cut into squares and dust with icing sugar. Makes 16 squares.

sounds delicious--just one question: I assume that by icing sugar you mean confectioner's sugar right?
