Pumpkin Pie Squares

Ingredients

  • 1 cup sifted flour
  • 1/2 cup quick cooking oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup butter, softened
  • 1 pound can pumpkin (2 cups)
  • 12 ounces can evaporated milk
  • 2 eggs
  • 3/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspon ground ginger
  • 1/2 teaspon ground cloves
  • 1/2 cup chopped pecans
  • 2 tablespoons butter, softened

Instructions

Combine flour, oats, 1/2 cup brown sugar and 1/2 cup butter in mixing bowl. Mix until crumbly, using mixer on low speed or a pastry blender. Press into ungreased 13 x 9" pan. Bake at 350 for 15-20 mintues. Combine pumpkin, milk, eggs, sugar, cinnamon, ginger and cloves. Beat well. Pour into hot crust. Bake at 350 for 15-20 minutes. Combine pecans, sugar and butter. Sprinkle over hot filling. Return to oven and bake 15-20 minutes or until filling is set. Cool in pan. Cut into 2" squares. Serve with whipped cream or ice cream. Makes 2 dozen squares.

Help - I do not know what I did wrong with this recipe. When I took it out of the oven after the final baking it was swimming in butter. I looked like I had poured a pound of butter over the entire bar. Now that it is cool - I tried the bar. The crust is mushy and I am not liking the testure of the bars. Is there an ingredient missing or did I maybe do something incorrect?
