Pumpkin Pie Squares
Ingredients
- 1 cup sifted flour
- 1/2 cup quick cooking oats
- 1/2 cup brown sugar, packed
- 1/2 cup butter, softened
- 1 pound can pumpkin (2 cups)
- 12 ounce can evaporated milk
- 2 eggs
- 3/4 cup white sugar
- 1 teaspoon cinnamon
- 1/2 teaspon ground ginger
- 1/2 teaspon ground cloves
- 1/2 cup chopped pecans
- 2 tablespoon butter, softened
Instructions
Combine flour, oats, 1/2 cup brown sugar and 1/2 cup butter in mixing bowl. Mix until crumbly, using mixer on low speed or a pastry blender. Press into ungreased 13 x 9" pan. Bake at 350 for 15-20 mintues. Combine pumpkin, milk, eggs, sugar, cinnamon, ginger and cloves. Beat well. Pour into hot crust. Bake at 350 for 15-20 minutes. Combine pecans, sugar and butter. Sprinkle over hot filling. Return to oven and bake 15-20 minutes or until filling is set. Cool in pan. Cut into 2" squares. Serve with whipped cream or ice cream. Makes 2 dozen squares.
