- 1 cup (2 sticks) butter
- 1/2 cup confectioners' sugar, plus extra for dusting
- 1 1/2 cup flour
- 1/2 cup flaked coconut
- 2 cups granulated sugar
- 4 eggs
- 3 tablespoons fresh lemon juice
- 3 tablespoons fresh lime juice
- 1 teaspoon fine-grated lemon zest
- 1 teaspoon fine-grated lime zest
- 1/4 teaspoon salt
- 1/2 cup flour
- 1 teaspoon baking powder
- confectioners' sugar for dusting

Preheat oven to 350 degrees F.

In mixing bowl, cream together butter and confectioners' sugar. Mix in flour and coconut until blended.

Press mixture evenly in a 13 x 9 x 2-inch baking pan.

Bake for 18 to 20 minutes until edges of crust are golden.

Meanwhile, in a separate bowl, beat granulated sugar, eggs, lemon and lime juices, zests, and salt until well combined.

Sift in flour and baking powder and mix until well incorporated.

When pastry is baked, pour egg mixture over top of pastry crust.

Bake about 25 minutes more.

After pastry is cooled, lightly dust with confectioners' sugar.
