Barley Pilaf

A quick and easy recipe for barley pilaf that is healthful and will please the entire family. This makes a great side dish for a chicken or fish dish.

Ingredients

  • 3 cup water
  • 1 bouillon cube
  • 1 cup quick pearl barley
  • 2 tablespoon vegetable oil
  • 1/2 cup onion, chopped
  • 10 ounce frozen peas

Instructions

1. In large saucepan, bring water and bouillon cube to a boil. Stir in barley; reduce heat. Cover; simmer 10 to 12 minutes or until tender, stirring occasionally. Drain.

2. In large skillet, heat oil. Cook onion and frozen peas in oil about 5 minutes; reduce heat. Add cooked barley; mix well. Continue cooking over low heat until heated through, stirring occasionally.
