Apulian Bracioli
This delicious beef dish slow cooks for several hours in order for the flavors to really meld and to create the perfect texture of the beef. This is a great special occasion dinner for the beef lover in your life.
Ingredients
- 1 to 2 large whole round steaks cut 1/4
- 4 (or more) garlic cloves, minced
- 1 cup fresh parsley, chopped
- 1/2 to 1 cup freshly grated Parmesan cheese
- Salt and Pepper to taste
Instructions
- Cut the fat from the round steak. Spread all the above ingredients over the steaks, roll tightly and hold closed with toothpicks. Tie meat with kitchen string, both short and long-ways.
- Brown in hot olive oil on all sides and place in your homemade tomato-based pasta sauce.
- Simmer, covered 3-4 hours or until tender. Serve with spaghetti and a good crusty Italian bread and a hearty red wine.
