Cheesy Taco Meatloaf
There are many variations of meatloaf recipes out there, but this version takes it to a whole different level. Cheesy Taco Meatloaf from Campbell's Kitchen uses picante sauce and tortilla chips instead of ketchup and breadcrumbs. This recipe is so different from traditional meatloaf that you just have to try it. It can be made in ten minutes and uses just four ingredients. Ingredients
- 2 pound ground beef
- 1 jar (16 ounces) Pace Picante Sauce
- 1 cup crushed tortilla chips
- 1/2 cup shredded Cheddar cheese

Preheat oven to 350 degrees F.

Thoroughly mix the beef, 2/3 cup picante sauce and tortilla chips in a large bowl. Place the beef mixture into a 3-quart shallow baking pan and shape into an 8 x 4-inch loaf.

Bake for 1 hour or until the meat loaf is cooked through.

Sprinkle the meat loaf with the cheese. Bake for 5 minutes or until the cheese is melted. Heat the remaining picante sauce in a 1-quart saucepan over medium heat to a boil. Serve the sauce with the meat loaf.
