Cozy Sheet Pan Steak and Potatoes

Plus, how can you go wrong when there are steak and potatoes involved? This easy, sheet pan steak dinner is one that you'll find yourself coming back to time and time again. It's a great way to get a complete meal on the dinner table in under an hour, not to mention a flawless effort to get your family to eat their protein and vegetables all at once. Face it. Ingredients
- 1/2 cup soy sauce
- 6 tablespoon olive oil, divided
- 2 tablespoon balsamic vinegar
- 2 tablespoon honey
- 2 clove garlic, minced
- 1 1/2 pound flank steak
- 1 pound baby red potatoes, halved or quartered depending on the size
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1 tablespoon fresh chopped rosemary
- 1 pound asparagus, trimmed and cut in half
- 1/4 cup chopped shallots

Instructions

In a small bowl whisk the soy sauce, 4 tablespoons olive oil, balsamic vinegar, honey, and garlic.

Place the flank steak in a baking dish or plastic Ziploc bag. Add the marinade and toss to coat. Chill in the fridge for 30 minutes or longer.

Heat oven to 450 F.

Line a baking sheet pan with foil, spray lightly with cooking spray.

Place the potatoes on the baking sheet, drizzle with 2 tablespoons of olive oil, salt, pepper and chopped rosemary. Toss to coat.

Place baking sheet on top oven rack and bake the potatoes for 15-18 minutes.

Remove baking sheet from the oven and using a spatula move the potatoes to one side of the pan. Place the asparagus in the middle of the baking pan and top with the chopped shallots. Remove the flank steak from the marinade and place on top of the asparagus.

Set the oven to broil. Place baking sheet into the oven and broil for 6 minutes.

Turn the steak and broil for another 6 minutes or until cooked to desired doneness.

Remove from the oven and allow the steak to rest for 5 minutes before slicing the steak against the grain.
