Home Baked Meatloaf
Nothing says home cooking like meatloaf and mashed potatoes with gravy. Home Baked Meatloaf is wonderfully coated with onion gravy that goes fantastically well with your potatoes! This is a great recipe for meatloaf lovers!
Ingredients
- 2 cup bread crumbs
- 1 pound lean ground beef
- 1 pound lean ground pork
- 1 egg, slightly beaten
- 3 tablespoon fresh parsley, chopped
- 1 medium onion, chopped
- 3 cloves garlic, chopped or pressed
- 1 stalk celery, finely chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon pepper
- 1 1/2 teaspoon salt
- Gravy
- 1/2 cup onion, chopped
- 3 tablespoon flour
- 1 1/3 cup beef broth, (use some juices from pan)
- 1 tablespoon fresh parsley, chopped
- 3 tablespoon butter
- 1/4 cup red dry wine
Instructions
- Preheat oven to 350 degrees F.
- Mix all ingredients together.
- Shape into a loaf pan. Bake for 1.5 hours.
- If desired, spoon onion gravy over baked meatloaf slices.
Onion Gravy
- Saute 1/2 cup of onion in 3 Tbsp of butter until slightly brown.
- Stir in 3 Tbsp of flour and mix 1 and 1/3 cup of beef stock,1 Tbsp of minced parsley and 1/4 cup dry red wine. Simmer for 3-5 minutes, stirring constantly. Serve with potatoes.
