Swiss Steak
Ingredients
- 2 pound beef round steak (top round, bottom round or sirloin), 1/2 inch thick
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoon shortening
- 1/2 cup minced green pepper
- 1 3/4 cup minced onion
- 1 can tomatoes, (16 ounces)
- 1 teaspoon salt
- 3/4 teaspoon pepper
Instructions
4 servings. Lightly score surface of meat, cut meat into 8 serving pieces. Mix flour, 1/2 teaspoon salt and 1/4 teaspoon pepper. Sprinkle half the flour mixture on one side of meat, pound in. Turn meat and pound in remaining flour mixture. Melt shortening in large skillet. Brown meat in shortening over medium heat about 15 minutes. Reduce heat, cover tightly and simmer 1 hour. Add small amount of water if necessary. Mix Tomato Sauce ingredients, pour on meat. Cover, simmer 15 minutes. Divide meat between 2 ungreased baking pans, 8x8x2 inches. Spoon half the sauce on meat in each pan. Cool quickly. Wrap, label and freeze. 45 minutes before serving, remove 1 pan Swiss Steak from freezer and unwrap. Cook uncovered in 400F oven until tender, 30 to 40 minutes. To Serve Immediately: Cover tightly, simmer until tender, about 30 minutes. (3 servings.)
