Simply Sweet and Sour Meatballs
You can retire your oven for this simple meatball recipe. The only appliances you need to make this home-cooked favorite is a stove-top and a microwave. There is no oven required with this delicious meatball recipe.

Ingredients
- 1 green pepper, thinly sliced
- 2 (8-ounce) cans pinapple chunks, drained, juice reserved
- 3/4 cup brown sugar, packed
- 1/4 cup cornstarch
- 3/4 cup cider vinegar
- 1/4 cup soy sauce
- 1 pound ground beef, crumbled
- 1/4 cup dry bread crumbs
- 1 egg, large
- 1 tablespoon soy sauce
Instructions
- Combine ground beef, and shape mixture into 20 meatballs.
- Cook in a skillet, over medium heat until browned and cooked through; set aside.
- In a 2-cup measure, combine reserved pineapple juice with enough water to equal 1 1/3 cup, set aside.
- In a 2-quart casserole, combine the brown sugar, vinegar, cornstarch and soy sauce, then blend in the pineapple juice mixture.
- Microwave at high for 7 to 15 minutes, or until the mixture is clear and thickened, stirring 3 or 4 times during cooking, set aside.
- Add meatballs, green pepper slices and pineapple chunks to the sauce.
- Microwave at high for 4 to 6 minutes, or until mixture is hot, stirring once or twice during cooking time.
