Breakfast Bell Pepper Rings are a quick and easy way to make your morning eggs a little more fun to make (and eat!) Think of this recipe as the veggie version of "eggs in a basket" or "eggs in the hole." This is a great way to get some veggies in first thing in the morning too! Simply cut thick rings of your favorite color bell peppers to prep, get out the frying pan, as many eggs as people you're feeding and the rest is super simple!
