Broccoli Potato Scramble
Ingredients
- 1 bag frozen shredded potatoes
- 1 large pkg frozen broccoli pieces
- 12 large eggs
- 20 thin slices processed yellow cheese
Instructions
Fry the potatoes. Cover the bottom of a large rectangular casserole dish (like a lasagna pan) with the potatoes. Scramble the eggs and make a layer on top of the potatoes. Steam the broccoli until tender and layer on top of the eggs. Cover the top of the casserole with the cheese slices. Bake at 325F until heated through.
