Chinese Sausage Scrambled Eggs with Black Beans
Ingredients
- 1 link Chinese sausage, thinly sliced on the bias
- oil
- salt
- 3 large eggs
- 2 stalks green onion tops, sliced on the bias to 1 inch segments
- salt and fresh ground pepper
- 1 Tbsp black beans sauce
- 1 tsp garlic
- 2 Tbsp soy sauce
- 1 Tbsp balsamic vinegar
- roasted nori seaweed
Instructions
Fry Chinese sausage over low heat until translucent, remove and reserve. Add oil and salt to the sausage-flavored oil, scramble eggs until slightly runny. Add green onion tops. Lightly season with salt and fresh ground pepperand reserve. Fry black beans in oil over low heat for 30 seconds, mix and plate with above. Lightly brown garlic in medium hot oil, then add soy sauce and balsamic vinegar. Simmer for 30 seconds, reducing partially and drizzle over the above. Garnish with toasted nori seaweed (cut in thin strips on the bias with scissors).
