Crowd-Pleasing Crescent Casserole

This recipe for Crowd-Pleasing Crescent Casserole is super easy to throw together on a weekend for breakfast or brunch. It's a sausage breakfast casserole on a crescent roll crust with broccoli, cheese, eggs and more. This hearty casserole is sure to be loved by all and is filling enough to feed a crowd.

Ingredients
- 1 pound ground breakfast sausage
- 1 tablespoon butter
- 1 onion, chopped
- 1 package frozen broccoli (optional)
- 10 eggs
- 1/2 cup half and half or milk
- 1/4 cup shredded Parmesan cheese
- 1 cup shredded cheddar cheese
- 1 package crescent rolls (8 count)
- Salt and pepper, to taste
- Cooking spray
Instructions
- Preheat oven to 350 degrees F.
- Cook breakfast sausage, drain off any grease. Set aside.
- Place butter in pan and sauté onions for 5 to 10 minutes until clear. Add in broccoli and cook for an additional 5 to 10 minutes until broccoli is warmed, stirring occasionally. Set aside.
- In a large bowl, crack the eggs. Add cream, salt, pepper, half and half, and parmesan cheese. Whisk until the eggs are scrambled.
- Spray the bottom of a 2-quart casserole dish with cooking spray. Line bottom of casserole dish with all of the crescent rolls. (You may have to move them around to completely cover the dish).
- Place the cooked breakfast sausage on top of the crescent rolls along with the broccoli and onion mixture, spread around so it's even.
- Pour in egg mixture and top with shredded cheese.
- Cover and bake for 30 to 35 minutes. Uncover and cook for additional 5 minutes until the cheese is golden brown.
