Ham and Cheese Mini Quiches
"I grew up with my mom making big batches of delicious food to take to her friends and co-workers. She worked with mostly men, so she always chose to bring good, hearty food. I remember her making these mini quiches with ham, sausage or bacon — whatever we had on hand. They must’ve been popular because she made them the most! Fifteen years later, I found myself making them for my friends at work, and they always asked for more, too. I can say with certainty that everyone loves them! Feeding people is kind of my “thing,” so I enjoyed making breakfast for my team as often as I could."

Ingredients
- 6 eggs, whisked
- 2 Tbsp milk
- 1 cup cheddar, shredded
- 1/3 cup ham, diced
- salt & pepper, to taste

Whisk eggs & milk together. Season with salt & pepper.

Pour into the mini-muffin tin, filling only half of each.

Drop in chopped ham and top with shredded cheese.

Bake at 350F for 10-12 minutes.
