Notes*For the glaze, start with 3 teaspoons warm water and, if needed, add an additional 1 teaspoon warm water in 1/2 teaspoon increments.

Ingredients

  • 1 cup butter, melted
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 cup pure pumpkin puree, about 1/2 of a 15 ounce can
  • 1 cup flour
  • 2 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  1. Preheat oven to 375F. Line a 12-cup muffin tin with cupcake liners

  2. Combine melted butter, granulated sugar and brown sugar until blended.

  3. Stir in eggs, one at a time and then pumpkin puree.

  4. Add flour, pumpkin pie spice, baking powder, baking soda and salt and stir until a smooth batter forms.

  5. Divide batter evenly between cupcake liners, preferably using a scooper.

  6. Bake 25 minutes or until toothpick inserted in centers comes out clean.
