Ingredients
- 6 ounces chorizo sausage, cooked and drained of grease
- 4 eggs, scrambled
- 1 cup shredded Mexican Blend cheese
- Mexican hot sauce
- 4 (10-inch) flour tortillas
- Sour cream
- Sliced avocado
- Hot sauce

Instructions

Spray a large skillet or griddle with cooking spray.

Place the tortillas on a microwave safe plate and cover with a damp paper towel. Microwave for 30 seconds to warm.

On a work surface place the 4 tortillas. Divide the eggs on each tortilla, leaving a ½ inch border. Divide the cooked chorizo over the eggs, then sprinkle with the hot sauce. Divide the cheese last over the eggs and chorizo.

Fold the top of the tortilla down over the filling to the center, working clockwise continue to fold the tortilla over until the filling is covered. You will have 5 folds.

Heat the skillet or griddle until hot. Place the quesadillas folded side down and cook for 3-4 minutes until browned. Flip over and brown the other side.

Serve with the sour cream, avocado, and hot sauce.
