Homemade Mini Breakfast Pies
Homemade Mini Breakfast Pies will make your kitchen a bright, cheery and delicious place to visit in the morning. Flaky phyllo dough provides the base for your eggs, cheese, bacon and tomatoes to sit on while they bake.These individual portions will make it easy to divvy out plates in the morning, and each portion is just hearty and filling enough for one person to make it through till lunch.
Ingredients
- 1 package frozen puff pastry or phyllo dough
- 4 large eggs
- 8 slice bacon, cooked
- 4 slice thick-cut Cheddar cheese
- salt and pepper, to taste
- cherry tomatoes for garnish, optional
Instructions

Preheat oven to 425 degrees F.

Cut puff pastry sheet into 4 equal portions. Score a square shape into each portion and pierce the center section with a fork.
*Scoring means to pierce the dough but not cut through entirely. -
Bake until lightly golden brown.

Remove from the oven and press down the center of each puff pastry "dish" so that it collapses.

Place a slice of cheese in each bowl and add bacon slices around the edges of your puff pastry "dish."

Crack an egg in each “dish” and sprinkle with salt and pepper.

Bake in the oven until egg whites are set. About 10 minutes. Yolks will be soft.
