Make Ahead Brunch Casserole is perfect when you are too tired to make a big meal but have a big appetite. Simply prepare it the night before, freeze it and enjoy the cheesy, potato casserole recipe the next morning. It's that convenient.

Ingredients
- 8 squares frozen hash browns
- 1 1/2 cup Cheddar cheese, shredded
- 8 ounce lean ham slices, cut to strips
- 1 cup liquid egg substitute
- 2 3/4 cup milk, divided
- 3/4 teaspoon dry mustard
- 1/4 teaspoon ground pepper
- 1 can cream of mushroom soup
Instructions
- Begin preparing night before by placing the frozen hash browns on bottom Of 9 x 13 baking pan that has been sprayed with non-stick coating.
- Top hash browns with 1 cup of shredded cheese and strips of ham.
- Beat Together egg substitute, 2 1/4 cups of milk, mustard & pepper and pour over Ham. Cover with foil and refrigerate until morning.
- Preheat oven to 400 degrees F the next morning and remove pan from refrigerator.
- Mix 1/2 cup milk with can of mushroom soup and pour over casserole. Top with remaining 1/4 cup cheese and bake for 45 minutes.
