Mama's Breakfast Casserole
I've once considered seeing a doctor because of my skepticism towards the greatness of Mama's Breakfast Casserole. Every bite is a joy and simply unbelievable. Wake up to a great casserole recipe and start your day in a hearty way.

Ingredients
- 1/2 cup onions, chopped
- 1 tablespoon butter
- 5 ounces shredded ham
- 1 medium tomato, chopped
- 2 cups biscuit mix
- 1/2 cup water
- 1 cup Swiss cheese, shredded
- 2 eggs
- 1/4 cup milk
- 1/4 teaspoon dillweed
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons minced chives
Instructions
- Preheat oven to 350 degrees F.
- In a skillet, saute onion in butter until tender. Stir in ham and tomato. Set aside.
- In a bowl, combine biscuit mix and water. Mix well. Press onto bottom and 1/2" up sides of a greased 13x9" baking dish.
- Spread ham mixture over the crust. Sprinkle with cheese.
- In a bowl, beat eggs, milk, dill, salt and pepper. Pour over cheese. Sprinkle with chives.
- Bake, uncovered, at 350 degreesF for 25-30 minutes or until knife inserted near center comes out clean. Recipe can be doubled.
