Oven fried French Toast with Blueberry Sauce
Ingredients
- 6 thick slices white or challah bread
- 4 eggs
- 1 c milk
- 1 tsp vanilla extract
- 1 tsp salt
- 2 Tbsp butter, at room temperature, for greasing pan
- confectioner's (powdered) sugar
- blueberry sauce (see below)
Instructions
Place bread in a flat baking dish large enough to hold slices in one layer. Beat eggs, milk, vanilla, and salt. Pour over bread, turning bread so it is wet all over. Cover with plastic wrap and refrigerate overnight. Preheat oven to 375F. Butter a baking sheet. Place bread on sheet and bake 10 minutes. Turn over and bake 10 more minutes or til golden brown on both sides. Take from oven and halve slices diagonally. Sprinkle with confectioners sugar and serve with blueberry sauce. Blueberry sauce: In small pan combine 1 c sugar and the juice of 1 lemon. Cook over low heat til sugar begins to dissolve. Add blueberries, stir well, and continue cooking over low heat for about 5 minutes or til blueberries soften and form a sauce. Spoon over French toast and serve at once.
