Quick Breakfast Pizza Slices with Quail Eggs and Tomato Sauce

"Now, who doesn’t like a pizza? But pizza for breakfast? Sounds like the perfect start to any day, right? I’m so glad we’re unanimously agreeing on this.?? This was one of the tricks to make them eat the veggies. Never told them the veggies were the actual ‘gems’ they had to eat the pizza as it was, no choosing, no picking if they wanted more chances to find the treasured gems. Breakfast pizza? Oh yes, can you think of a better breakfast? Perfect for weekend but not only…totally delicious and homemade wholeness."

NotesThis bread is also homemade – see homemade bread recipe here , this recipe can also be made on flat bread both so delicious. And of course if you cannot find the time to make own bread use a nice artisan bread that you may find at your local bakery.
This tomato sauce can be made in larger quantity and jarred while hot in sterilised jars.Pop open and use as needed keep refrigerated after opening if not fully used. I always make 3-4 jars and these last for quite some time if not used for other dishes like any quick pasta or added to some cooked chicken and served on rice or with potatoes. I will leave it for you to create new dishes and venture.

Ingredients

  • For the tomato sauce :1 onion grated or cut into chunks
  • 1 pepper I love using roasted ones
  • 1 celery stick grated or chopped
  • 1 can chopped tomato
  • 200 ml tomato sauce pasatta
  • 1 tsp tomato paste
  • 1 clove garlic crushed and chopped
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp sweet soy sauce

Instruction

  1. Place a pan on medium fire, add the olive oil, chopped or grated onions, crushed and finely chopped garlic, pepper, celery, salt and pepper. Sauté these for a good 10 min stirring occasionally and adding a drizzle of water every now and again as required.

  2. When the vegetables are soft, add the tomato sauce, chopped tomatoes and the tomato paste, Worcestershire source and the sweet soy sauce and the thyme. Cook uncovered for 15 min on low fire from the boiling point. It needs to be boiled down with no running juices. Once ready set aside and allow to cool.

  3. Preheat the oven at 180°C or 350°F and line a baking tray with parchment.

  4. Toast 8 slices bread and top with a spoonful or two of the tomato sauce.

  5. Form 2 wells in the tomato sauce and break the quail eggs into those wells. Add 2-3 olives grind some pepper to taste.

  6. Place these in the oven for 5-8 min till the quail eggs are done to how you want those done, soft or very well done.

  7. When ready, take out of the oven sprinkle the parsley over some red chillies if you choose to use and serve while nice and hot. This can also be enjoyed cold later on.
