    Southwest Scrambled Eggs

    Ingredients

    • 4 eggs
    • 1 hot link
    • 1 patty or 2 links regular sausage
    • picante sauce
    • cheddar cheese

    Instructions

    Remove skin from Hot link sausage and dice into 1/4" chunks. Brown regular sausage, adding hot link chunks when browned. Meanwhile, beat 4 eggs lightly with 2 TBSP picante sauce until well mixed. When sausages are browned, drain excess grease (if any) and add beaten eggs. Scramble egg and sausage mixture until eggs are desired consistancy. Remove from heat and spread egg mixture out over serving platter. Grate cheddar cheese over eggs, cover and allow cheese to melt. (You may want to microwave or bake it for a minute) Once cheddar is melted, top with more picante sauce and serve. Makes 2 servings.
