Strawberry stuffed French Toast

Ingredients

  • 2 large strawberries (fresh or frozen)
  • 4 ounce cream cheese
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 1 tablespoon milk
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon sugar
  • 1/8 teaspoon vanilla bean
  • 8 slices bread
  • oil

Instructions

Beat eggs, milk, cinnamon, sugar, and vanilla with a whisk until well mixed. Spread all 8 slices of bread with the strawberry mixture. Put 2 slices of bread together sandwich style with the strawberry mixture in the middle. Dip each of the four sandwiches in the egg mixture. Pour oil in a hot griddle, 350, and put the toast in the oil, cooking until golden brown, turning once. Serve either with maple syrup or fresh berries and whipped cream.
