Ingredients

  • 2 cup all-purpose flour
  • 3 cup grated carrot
  • 6 tablespoon unsalted butter
  • 3 slice bacon
  • 1 egg
  1. Preheat oven to 400°. Line a baking sheet with parchment paper.

  2. In a bowl, whisk together flour, sugar, baking powder, salt, and baking soda. Using 2 forks, cut in cold butter until it resembles coarse crumbs. Add in an egg.

  3. Add in bacon crumbs.

  4. Add in grated carrot.

  5. Add ½ cup cold buttermilk to to flour mixture, stirring to combine. Bring mixture together with hands forming a dough. Add 1 more tablespoon of a buttermilk if the mixture is a bit dry.

  6. Knead dough onto a lightly floured for a few minutes.
