Peppermint Brownies

I absolutely love the combination of chocolate and mint, and these peppermint brownies are no exception! They are so cool and delicious...even when they're warm...that I can never eat just one. You won't be able to, either!

Ingredients

  • 3 sticks butter or margarine, melted
  • 3 cup sugar
  • 1 tablespoon vanilla extract
  • 5 eggs
  • 2 cup all purpose flour
  • 1 cup cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 24 small (1 1/2-inch) peppermint patties, unwrapped

Instructions

  1. Heat oven to 350F degrees.
     
  2. Grease a 13"x9" pan.
     
  3. In a large bowl, stir together margarine, sugar, and vanilla with a spoon.
     
  4. Add eggs, and stir until well blended.
     
  5. Stir in flour, cocoa, baking powder and salt; blend well.
     
  6. Reserve 2 cups of batter.Spread remaining batter in pan.
     
  7. Arrange peppermint patties in single layer over batter, about 1/2 " apart.
     
  8. Spread reserved 2 cups of batter over patties.
     
  9. Bake 50-55 minutes or until done.
     
  10. Cool completly in pan on wire rack; cut into squares.
