Old Timely Hot Chipped Beef

Old Timely Hot Chipped Beef, or S.O.S., as it's more colorfully referred to, is an old wartime recipe that veterans of WWII and people of the Great Depression made famous. When Americans needed a cheap way to stretch out the rations, this was one recipe they turned to. Traditionally, the dried beef dish is served in a creamy sauce over toast or potatoes. This recipe is similar, however, we recommend trying it as a dip with pita chips or crackers. Serve this dish for dinner or as a hearty snack. While it may not be the prettiest recipe you've ever seen, it makes up for it in flavor.

Ingredients

  • 1 package (2.5 ounce) chipped beef, finely cut
  • 3 scallions, chopped
  • 2 tablespoon parsley, chopped
  • 1 (8-ounce) package cream cheese, softened
  • 2 ounce softened blue cheese
  • 1 cup jarred mushrooms, drained
  • 1/3 cup sour cream

Instructions

  1. Preheat oven to 325 degrees F.

  2. Rinse beef to remove salt. Combine all ingredients in a shallow Pyrex or oven-proof dish.

  3. Bake for 20 minutes. Serve on toasted bread or dip with crackers or pita chips.
