Pineapple Side Dish Casserole
Try this refreshing tropical casserole as a side dish with ham, roast pork or turkey. It's a unique dish that combines sweet and savory flavors and is a great alternative to bland mashed potatoes or pasta.
Notes
I think I actually use a larger dish than a 1 quart casserole but I'm not sure of the capacity. Also, I have made this casserole substituting 2 1/2 cups of thick applesauce, unsweetened, for the pineapple. If you try this, add 1/2 tsp. ground cinnamon to the applesauce.

Ingredients
- 1/4 pound butter, melted
- 1/2 cup sugar
- 1 tablespoon flour
- Salt
- 2 eggs, beaten
- 20 ounce can crushed pineapple and juice
- 5 slices broken bread
Instructions
- Preheat oven to 325F degrees.
- Mix all ingredients except the bread.
- Then add the bread.
- Bake in a 1 quart casserole for 45 minutes or until golden brown.
