One Pot Jambalaya
The only thing better than the taste of this one pot Jambalaya is that you can make it all in one pot! Just chop and drop the ingredients into a large skillet and you've got a one pot meal recipe that's jazzy and delicious!
Ingredients
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup onion, chopped
- 1 celery stalk, sliced
- 1 green bell pepper, seeded, cut into strips
- 1 cup long-grain white rice
- 1 can stewed tomatoes (about 16 ounces)
- 1 cup water
- 1/8 teaspoon hot pepper sauce
- 1/2 cup cooked ham, chopped
- 8 chorizo slices
- 1 teaspoon dried thyme
- 1 teaspoon salt
- black pepper to taste
- 1 pound medium shrimp, shelled and deveined
Instructions
- In a large skillet, heat oil over medium heat. Add garlic, onion, celery, and green pepper and saute just until softened (about 3 minutes). Add rice, tomatoes and their juice, the water, hot-pepper sauce, ham, chorizo, thyme, salt, and pepper. Bring to a boil, cover, reduce heat, and simmer 15 minutes.
- Quickly add shrimp, cover, and cook 5 minutes longer, or until rice is tender and shrimp have turned pink. Toss with a fork.
- Garnish with lemon and parsley, if desired.
